Appetizers & Snacks

Easy to prepare and delicous, though I’d recommend a bit more heat than the recipe calls for. Hoang has made a version of this with cucumbers since I’ve known her which I’ve always loved.

Yogurt Cheese (Eastern Mediterranean)
Holy crap, we loved this stuff. Plop some good, whole milk Greek yogurt (they sell it at Trader Joe’s) onto some cheesecloth over a bowl for a day. Scoop it out, give it some salt, paprika and EVOO and you’re good to go.
2 minutes of prep, 24 hours to get rid of the whey

Sautéed Spinach with Sesame (Korea)
This dish really retains the flavor of the spinach, despite the sesame oil and soy sauce and garlic. Quick, simple and delicious. Can be hot or cold.

Crostini with Beans and Greens (Italy)
Ahhh, the perfect snack/appetizer. It’s healthy (cannellini beans, spinach, garlic, onions), filling, easy and delicious. I love it and it will become a staple in our house. So much better than chips and salsa for all those reasons. It does require a little cooking, but whatever… It’s worth it.
