Yogurt Cheese (Eastern Mediterranean)

Holy crap, we loved this stuff. Plop some good, whole milk Greek yogurt (they sell it at Trader Joe’s) onto some cheesecloth over a bowl for a day. Scoop it out, give it some salt, paprika and EVOO and you’re good to go.

These are great as long as you get them crispy and eat them right away. I used dried, then soaked, then cooked chickpeas. It probably makes a difference.

Eggplant Caviar (France)

We had two tired looking eggplants left in the garden in October. So this is the perfect dish to use them; having nothing in the world to do with actual caviar, it is quite delicious. Hoang loved it.

This dish really retains the flavor of the spinach, despite the sesame oil and soy sauce and garlic. Quick, simple and delicious. Can be hot or cold.

Ahhh, the perfect snack/appetizer. It’s healthy (cannellini beans, spinach, garlic, onions), filling, easy and delicious. I love it and it will become a staple in our house. So much better than chips and salsa for all those reasons. It does require a little cooking, but whatever… It’s worth it.

We had really high hopes for this potato and anchovy casserole, as we both enjoy anchovies. It was good, but not as great as we’d hoped. I think it was the baked milk/half and half that may have turned us off.

Grilled Satay (Malaysia)

You’d be amazed how many ingredients this requires. Hoang did a bang-up job and this recipe kept the chicken chunks moister than is typical of grilled chicken skewers. I liked it as well as any restaurant.
