Not the typical overcooked seafood paella, but with chicken thighs and all sorts of mushrooms instead. (Recipe calls for chorizo too.) This is from Jose Andres and I can’t imagine how good it is when he makes it, because my ghetto version was quite excellent.

Pizzocheri with Savoy Cabbage, Potatoes, and Cheese (Italy)

Sounds weird and I used buckwheat soba noodles in place of the Italian buckwheat pizzocheri noodles, but it was pretty good – despite how gross it looks.

Pasta with Broccoli Rabe (Italy)

Broccoli rabe is in a lot of Italian cooking and I don’t know why. It kind of sucks, but in this dish it’s fine. Thankfully, the hot “Italian” turkey sausage rocked this dish.
