Oh man, this was a good dish. I didn’t know plantains were vegetables (at least that’s what section they’re in here), and I never had the guts to eat them once they turn pitch black. But that’s when they’re ripe, and that’s when you fry them up and then eat with some salt and lime. Delicious.

Ndizi wa Nazi (Plantains in coconut milk), Congo and Zanzibar

Between this dish and the last, I’ve become a definite fan of plantains. Don’t let them get quite as ripe as the last recipe, but half yellow, half brown; slice ‘em up, drop ‘em in some coconut milk with curry, allspice, cinnamon, cloves and salt and simmer it for 10 minutes and voila! Delicious!

Caramelized Potatoes (Scandinavia)

We had just watched the Chopped Champions Champion make caramelized potatoes for a desert dish so it was funny I found this recipe that night. My execution was good and my caramel was perfect, but the combination simply didn’t work for me at all. I ate two I think. Sweet-tooth Hoang ate most of the rest but even admitted that she didn’t need to eat potato candy again. Oh well.

Fantastic. Say you know someone who “hates” spinach. Here’s way to serve them spinach, which isn’t unhealthy, and still actually retains the Spinach flavor. It’s basically just lumps of spinach with some cheese, breadcrumbs and onions lightly fried up.

We loved them.
